Making a recent dinner, my wife Elisabeth put together Sohla El-Waylly's “hot and tingly” smashed cucumber salad, a wisp of a recipe that combines favorite ingredients like cukes, chili crisp, salt, sugar, and rice vinegar, along with something less commonly used in our household, MSG. Tucking in, it wasn't a surprise that the salad was good, but the monosodium glutamate gave it an extra savory deliciousness that made me wonder if Elisabeth intentionally set the salad bowl out of my reach.

In my decades living in North America and Europe, MSG was an unfortunately infrequently used ingredient, yet here it was making our tongues happy. Being drawn to it now was inspired by a trend I picked up on while reading some of the best new and recent cookbooks.

Easiest to pick out is the just-released Salt Sugar MSG, by Calvin Eng and Phoebe Melnick, that's a Cantonese-American extravaganza of deliciousness. Tu David Phu and Soleil Ho made regular use of MSG in 2024's The Memory of Taste, and Meathead Goldwyn makes a plea for its use with a special section way up on page five of his brand-new cookbook, The Meathead Method.

Plugging MSG into Eat Your Books, a subscription service that allows you to search recipes from within your own cookbook collection, I could see that among my cookbooks, El-Waylly makes great use of it in her 2023 James Beard Award book, Start Here. Helen Graves has a recipe for an MSG martini in her BBQ Days, BBQ Nights, along with a warning that—I'll paraphrase—you'll likely get hammered if you have more than one of them.

If I searched Eat Your Books for MSG but took out the results from these books, the list dried up to almost nothing. That's a shame considering what great work the ingredient does in the kitchen. El-Waylly uses it in that cucumber salad, a cauliflower and coconut soup, and a cool pistachio ranch fun dip made fun because she loves ranch. Meathead likes it on chicken, mac and cheese, and meat in general. Tu David Fu uses it with stir-fried clams, sticky rice dumplings, and tomato-braised salmon belly. Calvin Eng uses it on just about everything.

"I keep salt, sugar, MSG on my counter all the time," says Eng who's such a fan that he has a little MSG heart tattoo on the back of his left arm.

A self-professed "lover and user of MSG on a massive scale," he still has aha moments with it that help him appreciate its power. His favorite example is Cantonese chicken broth with scallions, garlic, ginger, and Shaoxing wine, finished with salt and MSG. Once for a private dinner, he featured a head-to-head tasting of the broth with salt next to broth with salt and MSG and was deeply impressed at the difference.

"It adds so much umami," he says, referring to the savory "fifth taste" that accompanies salt, sweet, sour, and bitter. "It adds a layer. It makes you want more." Indeed, I tried little head-to-heads with mugs of my own broth and enjoyed getting a hang of its effects and how to use it. Salt adds depth, but salt and MSG can make broth bigger, deeper, rounder, and more delicious.

Seasoning with MSG takes practice. Eng mentions that he didn't fully understand it until he worked in restaurant kitchens, but offers a simple suggestion on how to get used to using it.

"Have it on your counter next to your salt," he counsels. “Use both, but use less salt than you normally would, and taste as you go.”

More Than This

MSG is derived from glutamic acid (one of the amino acids) and is naturally occurring in delicious, umami-packed foods like anchovies, parmesan, tomatoes, and kelp.

When I asked chef turned food scientist, author, and fermentation expert David Zilber about how MSG makes things so delicious, he responded with his own question: "Shall I put this in Cheeto terms for you?"

My response was an emphatic yes.

"Glutamate is one of the most abundant amino acids in the living world. When you take it out of its natural context and add it to other foods in large quantities, it gets you to eat more," he explains. "They are like the signals in nature that the human body looks for when searching for the most digestible and nutritious foods. It hacks ancient and primal physiology to make bland foods more palatable and moreish."

Perhaps this makes my whole ritual of keeping a damp cloth next to my snack-touching hand on my annual (?) Cheeto binge make more sense.

Cravings are certainly affected by what we do and don’t like, Zilber explains, "but at the chemical level, smell and taste are the most ‘hands in the dirt’ senses our body has."

For as helpful as it is for making food better, the ingredient has had a tough go of it in North America. MSG "is derived from glutamic acid, one of the 22 amino acids," says my 2007 copy of The Food Lover's Companion, which calls the ingredient a popular flavor enhancer in Japan and China.

It also says "some people have reactions to MSG that caused them to suffer from a variety of maladies, including dizziness, headache, flushing, and burning sensations," information that is, like my copy, dated. This stems from a 1968 letter from Robert Ho Man Kwok printed in the New England Journal of Medicine, citing symptoms like dizziness, headache, and nausea that were dubbed “Chinese restaurant syndrome” and prompted many Chinatown restaurants around the world to hang glowing neon “NO MSG” signs on their front windows.

Problematically, it appears that either Kwok's story was more anecdotal than science-based or an orthopedic surgeon named Howard Steel penned the letter as part of a $10 bet with a colleague to see if he could get it published in a prestigious medical journal. Regardless, the Journal never made enough of an effort to correct things as they spiraled into a problem and a faux syndrome was born. (More on this in act one of this April 2025 episode of This American Life.)

Stuff like this makes for yarns that would be a lot more enjoyable if they didn't trail a 50-year xenophobic stink in their wake, and the "MSG is bad for you" stereotype persists. Too much of it can be harmful to you if you're ingesting ridiculous quantities. As El-Waylly writes, “If you have 1/2 cup of it on an empty stomach without food, you might feel ill, as you would from eating 1/2 cup of salt.” The dose makes the poison.

Eng's solution for promoting MSG, and one he encourages other chefs and food professionals to mimic, is right there on the cover of his book: Talk about it. Normalize it. Try it out.

Personally, I grabbed the aforementioned books and started cooking from them. Along with the hot and tingly cuke salad, El-Wally's dill pickle cucumber salad with pickle brine, onions, and toasted coriander seeds is another great place to start, and something that nearly set off a dinnertime squabble over who got the last bowl at a Ray-family meal. I tried Eng's popcorn recipe, which also features a dusting of toasted Szechuan peppercorns, fried garlic, MSG, and melted butter. I riffed on his sour cream and green onion dip, making mine with caramelized onions, then showering it with chives from my garden, quick-pickled onions, black pepper, and crumbled store-bought fried onions.

Not long afterward, I made a rather exquisite bagel with butter, cream cheese, smoked salmon, shallot, scallion, salt, pepper, and MSG. It's hard for something with ingredients this fantastic not to be delicious, but I started thinking that the MSG turned them all into the best versions of themselves.

There's a ways to go before MSG is anywhere near as mainstream as salt, but until then, I invite you to join me on the Normalization Team and, like Eng suggests, keep a container of it on the counter, right next to the salt.

An Okay-ish guide on How to find a good laptop for creating digital art on -2025

This is my first time making a post like this, but as someone who went from having very sparse technical knowledge to working helpdesk, I wanted to give my advice on drawing tablets/drawing workflows for comfort.

Something I ran into when trying to figure out a comfortable way for me to draw was the sea of like confusion when it came to drawing tablets. Initially, I was advised by a friend that a tablet like the Surface would be good for drawing and I really stuck to that closely- as it seemed like the alternative was to be stuck at a desk with a drawing tablet. This is not very comfy and also not very practical or easy for me to casually draw digitally. After becoming more technically literate, I realized that a 2in1 laptop serves practically the same function as a surface, is about half the price, and has a lot more power as a drawing "tablet" to also multitask things like music applications/ youtube in the background/ having a ton of tabs / ect...

So- here's a little guide on how to figure out what to look for in a laptop as of 2025!

Why 2in1? 2in1 laptops have a touch screen, can fold all the way back to a 'tablet mode' in case you like that sort of set up & come with a keyboard attached that's easy to use. Otherwise, a laptop with a touch screen should work just fine- but most likely might not be as physically flexible. What should I look for in a drawing laptop? There's some basic things I can advise as well as more nuanced things, I've also included links to some laptops that seem good: OS or Operating System: -ARM processor vs not (Windows 11 VS Windows11 ARM): I would personally avoid any sort of ARM processors, as it acts like a weaker version of+ lacks a lot of the functionality of windows 11. I had a surface laptop that I exchanged back because it did not have touch gestures. A way to see if the laptop you want has an ARM processor vs not is to check the OS or Operating System, if it has a arm processor it will likely say something like "Windows 11 ARM" or you can CTRL + F to find the word ARM in the description in your web browser.

-Linux VS MACOS VS Windows: Unfortunately I have less EXP with MAC devices, but as the price point is very high and they are not built to last AS LONG (No devices last unfortunately) I can't recommend them. -If you have an older device with touch screen capabilities that you would like to use, and would like to try to dive into Linux- I'd say go for it! Be aware that changing your OS will wipe your entire drive, so please back up your files first! If you end up not (Depending on how you go about installing it) I've been enjoying a new-er version of Kubuntu as our home media set-up! Generally, a lot of Linux distributions aren't as 'hard' on your hardware. When choosing what version of Linux to go with- as there are a lot of different types or distributions of Linux, it has been advised to choose a more stable download release version rather then the new-est version- to be able to know this, it may say if the download version is supported long term or not. I'm not a Linux expert and have generally followed guides on how to use this OS, to install a OS you will need some sort of flash media- like a flash drive/usb drive! If you end up not liking Linux, Windows has ISO files you can put on your flash drive to put it back, again this will wipe your data! It's a good idea to try and check to see if your software of choice works on the version of Linux you would like to install, there seems to generally be workarounds however, it's up to your comfort level when seeking these out.

-Windows is familiar! However, Windows 11 has this thing where it wants to back up all your files/data to OneDrive. I, Personally have been enjoying this service, as it makes backing up my files easy-cheesy. However, with the current political climate, this opens you/us up to having our privacy stripped/or our files erased without our consent as Microsoft sees fit. To combat this, I back up my files to a physical hard drive(S) as it is safer to have multiple back-ups rather then just 1.

-AVOID ChromeOS or chromebooks- is my advice GPU or Graphics Card: https://www.videocardbenchmark.net/ -Using this link, you can compare how the GPU of your device compares to the standard/other devices/ect... -Honestly, if you are not doing heavy-duty gaming or 3D sculpting, or video editing, you're probably just fine with a mid-tier GPU!

Where the files are stored / the Disk Drive: -As long as you avoid a HDD you're probably good to go! HDD drives use a physical disk that spins to save your data- this is more prone to failing and this is a lot of the reason why older laptops seem "slow"

-One of the ways to to check this- or a weird way I check this, is I click the Windows button/Windows search and type "Defrag" & You should see something that says something "Defragment and Optimize Drives" In this window, under 'Media Type' it should say something like Solid State Drive, and not 'Hard Disk Drive' or HDD -How much storage is important depending on if you store your all data on your device or not- I'd recommend at LEAST 500+GB to be safe, any more does not hurt!

RAM: For doing just art, you're probably good to go at just 8-16GB of RAM! Any more does not hurt.

Processors: I have less knowledge in this domain, however, if you are going for a intel processor, something like i5, 1255u is communicating that: i(NUMBER), the higher number = more processing power. I would recommend anything i5 and above, and the 1255u- a number I am using in this example, the 12 = 12th generation. 12 gen and up Is what I would personally recommend.

Do I need a separate stylus pen? Yes, however, there's a lot of good knock off brand pens that are cheaper if not better then official brand pens. I'd take into account how they charge, I like rechargeable pens that use Type C ports- like new-er phones!

After a few hours, Henry had been taken off of the pain medication, Charles telling him stories as it wore off and his mind cleared, becoming aware of the aching where skin met metal and the headache as his mind adapted to that fully awake state. The doctors tested each of the sensors on his body in turn, around his upper torso and down his spine, then all along his left arm and hand. Afterwards, he was cleared to leave the tent, and met up with Charles just outside.

“Finally! I can’t wait to show you around!” the pilot cheered as he began to walk with Henry, “It’s a bit to take in, but these barracks are gonna have to be your home for a while before we can actually send you back. I can’t wait for you to meet my squad, I still think they’re gonna love you! Well, in time. Either way, just keep following and you’ll see ‘em in no time!”

Henry looked around as Charles led him through the base. There were a lot of people here, and a lot of equipment, too. A few helicopters stood silently on pads nearby, and there were several jeeps and hummers on standby, many of which had become seats for groups of various soldiers. He noticed how they interacted, friendly and calm, the opposite of what he’d expected for such an important place. One, a particularly old man, gave him a small salute as he passed.

“Anddd here we are! Henry, meet my squad; Quentin, Calvin, Konrad, Mac, Phlex, Andrew, Madd and Eel! Boys, this is-”

“Henry Stickmin, possibly one of the coolest, most badass fuckers to ever live!” one of them cut Charles off as he approached. Henry recognized him as one of the twins Charles was talking about, though which one was unclear.

“Stickmin, we’ve heard a lot about you. As in, a lot. And by that I mean the twins won’t shut the fuck up about you,” a bearded pilot said. “I’m Quentin Alabaster, the other pilot on Charlie’s squad. Although, between you and me, I think I was just assigned to babysit these idiots.”

“Nononono, I don’t think you understand just how cool this guy is!” the other Bukowski twin insisted as he approached, pointing at Henry. “He’s not just the guy who betrayed us, then got betrayed by the Toppats so he took them all out. The West Mesa bustout, the Tunisian Diamond, the first breakout in the Wall in fifty fucking years, all of that was this guy. He does shit just to prove it can be done!”

“Wait, you broke out of the Wall? Damn, we’re gonna have to keep an eye out for their warden, then. He’s pretty pissed, last I heard,” another member questioned, pulling down his sunglasses dramatically. “Madd Ladd, by the way. Fellow badass, expert sniper.”

“By expert, he means the only one on our squad,” yet another member pointed out, before stepping forward to shake Henry’s hand. “Codename Eel at your service, this is my apprentice, Andrew,” He motioned to a soldier with shaggy black hair, who was currently shoveling ramen into his mouth from a cardboard cup. “We’re some of the top engineers here at the base. Although I specialize more in electronics, he’s better with actual mechanical issues. I’ll have to tell Turtle about all the stuff you’ve done, she’s pretty interested in your history.”

“Turtle?” Henry asked, turning to Charles.

“Oh, our demo expert. She’s a little… energetic, so watch out around her,” he explained.

Henry nodded a bit, turning back to the last two soldiers a good distance away, one of which was physically holding the other back as he clawed wildly at the air.

“Who’s…?” he pointed at the two and Charles followed his gaze.

“Oh, that’s Mac and Phlex. Mac is the one holding Phlex back, since he doesn’t really vibe well with people he knows has like.. ever sided with the Toppats? Some of us think he was raised by wolves or something, but hey, at least he hasn’t hurt one of us in a while. Mac, however, is actually really cool. If he wasn’t keeping Phlex from mauling you right now, I’d let ya go say hi. Maybe we can say hi, from here, though!” The pilot cleared his throat before calling out to him. “Hey, Mac, how’s it going?!”

“It’s going fine, just, y’know, making sure Phlex doesn’t kill the new guy!” he called back with an unsteady smile.

“Mhm, and how’s the flower shop?!”

“It’s going good, actually! My brother’s holding down the fort while I’m here, and he says it’s been making decent money! He’s been sending me a cut for a while now, so that’s good!”

“Nice! Well, Mac, this is Henry! This is the guy I’ve been talking about, y’know, the reason you’re kinda having to hold back Phlex right now!”

“Oh, yeah, uh, the girls don’t really feel safe around Phlex, so our squad ended up being just guys so one of them doesn’t end up killing him or something. Even Turtle or Captain Grit won’t come around if Phlex hasn’t been taken somewhere else,” Charles explained, and Quentin sighed.

“Which sucks, because I’d like to have Vicky join our squad. Uh, Vicky is Captain Grit, by the way. But no, I get stuck babysitting wolf boy, over there…” the other pilot groaned, casting a glance at the (still struggling) feral soldier.

“But, still, don’t worry, I think once Phlex has gotten used to you, you’ll fit right in!” Charles assured Henry, patting him on the back. Henry nodded a bit, looking back at the squad in front of him.
